Marinated Cheese Cups

Ingredients
1 (8 oz.) block Crystal Farms sharp Cheddar cheese
1 (8 oz.) block Crystal Farms pepper Jack cheese
3/4 cup sweet cherry peppers in oil, drained and peppers chopped
1/2 cup extra-virgin olive oil
1/2 cup white wine vinegar
2 green onions thinly sliced
2 tbsp fresh parsley, finely chopped
2 tbsp fresh basil, finely chopped
3 cloves garlic, minced
1/2 tsp salt
1/2 tsp freshly ground pepper
Directions
- Slice each block of cheese into ½ inch cubes. Place in a 13x9-inch dish.
- In a small bowl, combine the cherry peppers, oil, vinegar, onions, herbs, garlic, salt and pepper; pour over cheese cubes.
- Cover and refrigerate overnight, turning cheese cubes once. Drain excess marinade. To serve, divide among cups or plate with crackers and toasted bread.
